These bars are great for a breakfast on the go or an afternoon snack. Quick and easy to make too!
Step 1:
Preheat oven to 350 degrees and lightly coat a 9 inch square pan with cooking spray.
Step 2:
In a medium bowl, combine bananas, oil, molasses, vanilla, almond extract and egg whites.
Step 3:
In a large bowl, combine oats, flour, sugar, nutmeg and baking soda. Stir in the banana mixture until just combined.
Stir in the chocolate chips.
Pour into the prepared pan, smooth the top.
Step 4:
Bake for 16 to 18 minutes, or until the center springs back when touched our when a toothpick is inserted it comes out clean. Let cool on a wire rack for 5 minutes and then cut into 12 bars. Remove the bars from the pan. Store in an airtight container. If you leave the bars i the pan, the bottoms will get soggy.

1/2 cup mashed banana (about 1 medium)
1 tablespoon canola oil
1 tablespoon molasses
1 teaspoon vanilla
1/4 teaspoon almond extract
3 large egg whites
2 cups old fashioned oats
1/2 cup white whole wheat flour
2/3 cup sugar (I use no-calories sweeter)
1/4 teaspoon ground nutmeg
1/4 cup mini semisweet chocolate chips
