I love tacos. I love chicken. I love spice. I love… well, you get the idea. Chili Lime Chicken Tacos is the answer to my cravings. So easy to make I will probably make this a lot this summer. You will too.
Step 1:
To make the rub, combine the olive oil, chili powders, cumin, smoked paprika, garlic powder, onion powder, salt, pepper, brown sugar, lime juice and lime zest.
Then dip the chicken into the rub and coat. This is a wet rub but will coat the chicken very nicely.
Set the chicken aside to marinate in the rub for at least 30 minutes.
During that time, go ahead and make the Grilled Pineapple Salsa.
Step 2:
Grill the chicken until done. Let rest for about 10 minutes before slicing.
To serve:
Heat yellow corn tortillas until soft. Add a few slices of chicken, a little bit of shredded cheese, grilled pineapple salsa and avocado. Serve with a citrus margarita and call it Taco Night.

Ingredients:
1 1b chicken. I use the thin sliced chicken breast. Pre sliced, quick and easy to grill.
2 tablespoons olive oil
1 teaspoon chili powder
1/2 teaspoon Mexican chili powder
1/2 teaspoon cumin
1/2 teaspoon smoked paprika
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
3/4 teaspoon salt
1/4 teaspoon pepper
Juice of one lime (about 2 tablespoons)
Zest of one lime
Yellow corn tortillas
Shredded cheese; I use the Mexican blend
Avocado
