Sometimes a cake is all you really want or crave. A soft moist cake full of flavor and topped with a really, really good frosting. This is that cake. Perfect for a summer afternoon. This Key Lime Cake is easy to make and tastes yummy. It is kid and adult approved.
Step 1:
Preheat oven to 350 degrees
Step 2:
Add cake mix and gelatin mix to a medium bowl
Step 3:
Add the ingredients on the back of the cake mix box and lime juice. Beat until combined.
Step 4:
Pour into a 13 x 9 cake pan. My oven is small, shall we say it’s more like an Easy Bake oven, so this is the largest size pan my oven can hold. If you have a normal size oven, this cake works great in a 11 x 16 pan. Bake for 20 -22 minutes until cake springs back when touched or a toothpick inserted comes out clean. Let the cake cool.
Step 5:
While the cake is cooling prepare the frosting. Cream the cream cheese and butter. Add powdered sugar, vanilla, lime juice, lime zest and milk. Beat until smooth.
Step 6:
Frost cake and enjoy!
Ingredients:
1 box white cake mix (plus ingredients on box)
juice of 1 lime
1-3oz package lime instant Jello gelatin mix
Frosting:
1/2 cup butter, softened
4 oz cream cheese; softened
2 cups powdered sugar
1 teaspoon vanilla
1 tablespoon lime juice
2 teaspoons lime zest
1-2 tablespoons milk
