Key Lime anything is so refreshing. When you are not on the Island, trying to recreate that vibe can be difficult. But, this Key Lime Ice cream will immediately transport you back to Key West and the tropics. It is perfect on a hot summer day or a cold snowy winter day. Trust me, you will want to stock your freezer for this. Add a few scoops into your Margarita and, well… you will never drink plain Margaritas again!
Step 1:
Whisk together eggs, egg yolks, sugar, lime juice and lemon zest in a saucepan over medium heat until well blended.
Step 2:
Constantly stir the mixture until it thickens; about 7 to 8 minutes. Use a wooden spoon instead of the whisk. You will want the mixture to coat the back of the spoon once it has thickened.
Step 3:
Remove from heat and stir in the half and half until smooth.
Step 4:
Strain the mixture through a fine mesh strainer. Cover and chill for about an hour.
Step 5:
Pour chilled mixture into your ice cream maker. Following your ice cream maker’s instructions, mix until the soft serve stage. Store mixture in an air tight container in the freezer.
I like to serve this with a drizzle of chocolate sauce and graham crackers. It tastes just like a Key Lime Pie!

4 egg yolks
1 tablespoon lemon zest
2 1/4 cups half and half
3/4 cup lime juice
