I have a craving for nachos…. but, I am watching carbs …. what to do, what to do…
I created a way to enjoy the taste of nachos, without the carbs. It truly did satisfy my craving and it all tasted so yummy, I didn’t miss the nacho chips … too much!
Anyway, when you are watching your carbs and have a craving for Mexican food, try this out.
Step 1:
Place a small pile of hard cheese on a parchment paper lined baking sheet. I used a taco seasoning pre-shredded blend, which didn’t make the “chips” very crunchy, but you can use a Havarti cheese or even a Parmesan, which should make these much crunchier.
Step 2:
Bake in a 400 degree oven until the cheese melts. This took about 6 to 10 minutes. I wanted the cheese to be fully melted and beginning to crisp.
Step 3:
Let the cheese rounds cool slightly on the sheet until you can, safely, pick them up and wrap over a rolling pin (or glass) to cool completely and crisp up.
As a side note, since I used a softer cheese, these didn’t fully crisp up and retain their shape. But, they were still very good.
Step 4:
While your cheese rounds are baking in the oven, go ahead and prepare your nacho fixings. I browned lean ground turkey and added low sodium taco seasoning.
I cut up tomatoes, avocado, and lettuce. Go wild here, add what you like. Other toppings were rinsed black beans, sour cream and taco sauce.
To assemble place a cheese “chip” on the plate and top with your favorite stuff! As I said, these were a little softer than a chip, so I used a fork to eat, but they were very tasty and satisfying.
