I love cake like cookies. There is a time an a place for thin crispy cookies as well as soft and chewy, but my go to cookie is a cake cookie. Just love this recipe, it makes the perfect thick cake cookie. Mix it up and add your favorite chips or nuts.
Step 1:
Preheat oven to 375 degrees and line cookie sheets with parchment paper. Lining the pans is important, because the caramel bits will melt and stick to your pan and make for a very difficult clean up job …. trust me.
Step 2:
Whisk the flour, baking powder, baking soda and salt together in a bowl.
Step 3:
Beat the brown sugar, sugar and butter together until light and fluffy. Adding more white sugar makes the cookie more chewy, so this recipe has more brown sugar, giving the cookie its yummy texture.
Step 4:
Add eggs, one at a time and then the vanilla.
Step 5:
Add the flour mixture and beat until just incorporated.
Step 6:
Stir in the caramel bits, chocolate chips and pecans.
Step 7:
Scoop heaping tablespoons of the dough onto the baking sheets, leaving about 2 inches in between.
Step 8:
Bake the cookies until golden brown (about 13 minutes), rotating the baking sheets halfway through for even cooking. Transfer the cookies to a cooling rack.

1/2 cup mini chocolate chips
1 cup chopped pecans
