Key Lime Snowball Cookies

Have you ever bought a large bag of limes with the intentions of making something really great?  I seem to do this a lot. After all the bag of limes is much cheaper than buying just a few.  But, then I am forced to find something to do with all of those limes…. margaritas?…. key lime pie?…. how about Key Lime Snowball Cookies?   Yep, they are just wonderful and hit the spot on a warm sunny afternoon.  (By the way, they pair very nicely with a margarita!)

Step 1:

Whisk together flour and cornstarch.  Set aside.

Step 2:

Beat butter and powdered sugar until light and fluffy.

Step 3:

Beat in key lime juice and add zest.  (If you don’t buy the big bag of key limes, it’s ok to use regular limes.)

Step 4:

Mix in flour mixture until just combined.

Step 5:

Refrigerate the mixture for at least an hour.  I transfer the dough into a smaller bowl and cover with plastic wrap.

Step 6:

Preheat oven to 350 degrees.  Line your cookie sheets with parchment paper.  It will make it much easier to clean up, trust me on this one.

Step 7:

Scoop out the dough and form into a ball.  The dough should be nice and firm.  I used a mid-sized scoop (the 1.5 – 2 tablespoon size).

Step 8:

Bake for 17 – 19 minutes or until the cookies start to turn slightly golden.

Step 9:

Immediately sift powdered sugar all over the cookies.  Since these cookies are warm, you will use a lot of powdered sugar … trust me, a lot of powdered sugar.

Step 10:

Let the cookies cool on the pan.  Then I pick up the parchment paper and pour the cookies and the powdered sugar into a resealable bag.  Then, gently, really gently, shake the cookies and the powdered sugar in the bag.  This will give the cookies a nice coating of sugar.

Step 11:

Store the cookies in an airtight container in the refrigerator.  Don’t leave these out on the counter because they will start to get soggy.

1 1/2 cups flour

1/2 cup cornstarch

1 cup butter; softened

1/2 cup powdered sugar

2 tablespoons key lime juice

3 tablespoons key lime zest

plus more powdered sugar for dusting
