This combination may sound really bizarre, but trust me it tastes really good. I pulled this together in hopes of using up a few tomatoes and kiwis before they went bad.
The salad is tossed with a fresh lime vinaigrette that pulls all of the flavors together very nicely.
Step 1:
Slice the tomatoes, kiwi and avocado into bite size pieces. I like to use the heirloom cherry tomatoes that are often found at large box stores. But, you are free to use your favorite cherry or grape tomatoes.
Step 2:
Prepare the dressing by whisking together the lime juice, rice vinegar, sugar, olive oil and salt.
Step 3:
Toss all of the ingredients with the lime dressing and serve.
Salad ingredients:
1 1/2 to 2 cups grape/cherry tomatoes; quartered (bite size pieces)
4 kiwis; peeled and diced into bite size pieces
1 avocado; sliced into bite size pieces
Dressing Ingredients:
Juice of 1 lime
1 tablespoon rice vinegar
1 1/2 teaspoons sugar
1 teaspoon olive oil
pinch of salt
