A soft chocolate chewy cookie really hits the spot. When you add peppermint chips, well they are just perfect.
Step 1:
Sift together dry ingredients: flour, cocoa baking soda and salt.
Step 2:
Cream butter and sugar until creamy.
Step 3:
Add dry ingredients slowing into the butter mixture. I use a large serving spoon and add a few scoops and incorporate before adding more. Once these are all combined add the peppermint chips.
Step 4:
Drop by the rounded teaspoon onto ungreased cookie sheet. Mine tend to be larger than a teaspoon, but all good. If you make them larger, you may have to cook slightly longer.
Step 5:
Bake for 8 to 9 minutes in a 350 degree oven. Remove and let sit on the cookie sheet until set then let cool on a cooling rack. Should make about 4 1/2 dozen

1 1/4 cups butter (2 1/2 sticks) softened
2 cups sugar
2 eggs
2 teaspoons vanilla
