I love Mexican food, but when trying to watch carbs, it can be difficult. So, here is a way to enjoy the tastes of Mexican food without going overboard on the carb intake.
Step 1:
Brown ground turkey and onion in a skillet. Once the turkey is brown and the onions translucent, add the sliced chicken sausages.
Step 2:
Add meat mixture, chilies, tomatoes, black beans, chicken broth, corn and taco seasoning to a slow cooker.
Step 3:
Cook for 3 to 4 hours on high or 5 to 6 hours on low.
Step 4:
Garnish with chips, cheese.
Ingredients:
1 medium onion, chopped
1/2 pound ground turkey
1/2 pound chicken sausage (I like the garlic/mozzarella version) sliced into rounds
1 (four ounce) can diced green chilies
1 (14 ounce) can diced tomatoes
1 (15 ounce) black beans, rinsed
14 ounces chicken stock
1 package low-sodium taco seasoning
1 cup frozen corn
