This is a perfect way to use up all of those fresh summertime blueberries. Even if blueberries are not your favorite, you will love this summertime treat.
Step 1:
Prepare your blueberries by adding sugar and juice of one half lemon. Cover and let sit in the refrigerator for 2 hours. Stir every 3o minutes. They will make a sweet blueberry juice.
Step 2:
Make your ice cream base. Whisk the eggs until light a fluffy … about 2 minutes.
Step 3:
Gradually add sugar, whisking the entire time to dissolve.
Stir in milk and cream until mixed.
Step 4:
Drain off the juice from the blueberries and pour into the ice cream base. Smash the blueberries until smooth.
Step 5:
Add the blueberries to the ice cream base and pour into your ice cream maker.
I usually remove the soft frozen ice cream from the maker once done and store in an air tight container in the freezer until ready to serve.

One pint fresh blueberries
1/2 cup sugar
Juice of one half lemon
Ice cream base:
2 eggs
3/4 cup sugar
2 cups heavy cream
1 cup milk
