This recipe is so simple and easy that you will want to make these all summer. They are light and fluffy and everyone will be asking for the recipe!
Step 1:
Combine one box angel food cake mix and one can blueberry pie filling.
Step 2:
Prepare muffin pan by placing a cupcake paper into each section. Recipe makes 24 cupcakes.
Step 3:
Bake at 350 degrees for about 20 minutes. They will puff up very nicely in the oven, but expect them to deflate (very quickly) after you take them out. I turned them upside down to cool to keep them from sinking too much.
These can be frosted with whipped cream or vanilla frosting, but I find that too sweet. I just serve them as is or with a scoop of ice cream … preferably BlueBerry Ice Cream.
