Birthday Cake Fudge

I have a kid who just loves birthday cake.  Really, birthday cake anything.  When the cake box gods created birthday cake mix and frostings, he was in heaven.  Well, I thought I would help him relive his childhood and try this fudge.  It actually tastes like birthday cake fudge, plus it’s quick and easy.

 

Step 1:

Mix 2 cups cake mix and 2 cups confectioner’s sugar into a microwave safe bowl.

Instead of using a yellow mix, I used a birthday cake mix.  Feel free to use a yellow cake mix and add your own sprinkles.  Add them at the very end so the color doesn’t bleed into the mix.

Step 2:

Add butter, cut into small pieces and milk.  Do not stir/mix.

Microwave for 2 minutes on high.  Immediately stir until all combined.  The mixture should be stiff.  If it is runny then add about 1 teaspoon of cake mix or sugar until mixture is stiff.  If too thick, add milk 1/2 teaspoon at a time until it is the consistency you want.  Remember the mixture needs to be stiff!

I put into a 8 x8 pan lined with wax paper.  Keep the sides longer so you can pull it out very easily to cut perfect squares.  Refrigerate for an hour.  Slice into pieces and enjoy.  Now you can have fudge without standing over a stove, stirring and praying the mixture will set.

Ingredients:

2 cups cake mix

2 cups confectioner’s sugar

1 stick butter, cut into small pieces

1/2 cup milk (you can also use soy)

If want to use a 6 x6 pan; just half the recipe.
