My mom tasted these at a community party and fell in love with them. After hearing her rave about these, I made a batch, and they are light as a cloud… and very yummy. You will not believe how easy these are to make.
Step 1:
Mix the eggs and Cool Whip together in a bowl. Add cake mix. The mixture will be really thick and sticky. You can refrigerate the dough for about 30 minutes, to make it easier to handle. I used chocolate cake mix, but use your imagination here… all flavors taste great. (Imagine lemon in the summer, spice in the fall; etc)
Step 2:
Drop by teaspoon into a bowl of powdered sugar; roll to coat. Place onto lightly greased cookie sheets.
Step 3:
Bake at 350 degrees for 8 minutes. Let cool on the cookie sheet for 5 minutes to let the cookie set before transferring to a cooling rack.
Ingredients:
1 tub (8 oz) Cool Whip; thawed
1 box cake mix – your choice
2 eggs
1/3 cup powdered sugar
