A bright pop of lime in a bite size treat. Dipped in chocolate these cookies will be your go to anytime cookie.
Step 1:
Preheat oven to 350 degrees and spray Wilton Scalloped Cookie Pan(Affiliate Link) with oil.
Step 2:
Combine flour and salt in a small bowl.
Step 3:
In a large bowl beat butter and sugar until creamy and fluffy.
Step 4:
Add egg yolk, lime juice and zest to mix.
Step 5:
Alternate adding flour and milk to butter mix. Don’t over mix.
Step 6:
Place about 1 teaspoon in each cavity. I roll the dough into a small ball and press down to fill. You will want the cavity about 2/3 filled.
Step 7:
Bake for 5 minutes and turn the pan. Bake another 5 minutes.
Step 8:
Cool cookies in the pan for 5 minutes then remove to a cooling rack.
Step 9:
Melt chocolate wafers and dip 1/2 of the cooke into the mixture. I like white chocolate here, but you can use dark or milk chocolate. Sprinkle the top of the cookies with decorating sprinkles.

1 1/2 cups all purpose flour
1/2 teaspoon salt
5 tablespoons butter, softened
1/2 cup sugar
1 egg yolk
1 teaspoon lime juice
Zest of one lime
3 tablespoons milk
Candy melts
Sprinkles
