Mediterranean Crab Salad

I prepare this ahead of time and leave it in the refrigerator for the week.  It makes a great lunch as well as a light evening dinner.  The Mediterranean Crab salad is a unique way to use the imitation chunk crab found in most grocery stores.

Mediterranean Crab Salad

Step 1:

Chop all of the vegetables and put into the bowl.  I like to layer the bowl with the lettuce on the bottom and then each vegetable becomes a new layer.  Sprinkle the bowl with the oregano and top with the feta cheese.

When ready to serve, dress the salad with your favorite balsamic dressing.

Mediterranean Crab Salad


8 oz imitation crab meat, chunk style

1/2 cup lettuce, chopped

2 tablespoons cucumber, seeded and chopped

2 tablespoons red onion, chopped

2 tablespoon red pepper, chopped

2 tablespoons celery, chopped

2 tablespoons zucchini, seeded and chopped

3/4 tablespoon oregano

1 teaspoon garlic, minced

1/3 cup feta cheese; crumbled

2 tablespoons tomato; seeded and chopped
