Mexican food is my weakness. Anything with cheese, beans, Mexican spices and heat is my go to meal. Mexican Lasagna is my way to use up tortillas and create a great meal … snack… lunch…
Step 1:
Prepare ground turkey by cooking until no longer pink and add the taco seasoning according to package directions. I use the low sodium version.
Step 2:
Prepare refried beans per the can instructions.
Step 3:
Layer white corn tortillas on the bottom of the baking dish. I use an oval dish – but a square 8×8 or 9×9 pan can be used too.
Spread a layer of refried beans over the tortillas.
Sprinkle a layer of the taco seasoned ground turkey
Add a layer of cheese and a drizzle of salsa. I like to use the green salsa verde, but use your favorite salsa or taco sauce.
Repeat three more times. When complete, heat in a 350 degree oven for about 20 minutes; or until the cheese has melted and the dish is bubbly.
I serve with fresh tomatoes, avocado and a little more salsa.

1 pound lean ground turkey
1 package taco seasoning
1 can refried beans – your choice; I like spicy
9 white corn tortillas
1 cup cheddar cheese
1 jar favorite salsa
Lettuce; for garnish
Tomatos; for garnish
Avocado; for garnish
