I crave oatmeal cookies; specifically the Quaker Oats Oatmeal cookie recipe. But, I have a small, tiny oven which only lets me make 12 cookies at a time. So a batch can take some time. I figured out how to solve this, make pan cookies! These pan cookies make the Oatmeal cookies into soft, yummy bar cookies… very quickly!!

Step 1:
Beat butter and sugars until creamy. Make sure the butter is softened to allow the sugars to cream nicely.

Step 2:
Add eggs and vanilla; beat well.

Step 3:
Add flour, baking soda and cinnamon; mix well.

All of the dry ingredients (except the oats) added to the butter mixture.
Step 4:
Add oats; mix well. I prefer the Old Fashioned oats as they give the bars a better texture. If you only have Quick Oats in the house, you can use those.

The oats are all mixed in. Try not to over mix… you want the oats to retain their texture.
Step 5:
Stir in chocolate chips. If you prefer, you can add raisins, nuts, butterscotch or caramel chips. Feel free to make these bars your own. Be creative.

Step 6:
Bake in a 13 x 9 metal pan for 30 – 35 minutes in a 350 degree oven.
Let cool slightly before cutting into squares.

A metal pan works best for this recipe. A glass pan doesn’t seem to let the bars cook evenly.
Ingredients:
1/2 cup butter plus 6 tablespoons
3/4 cup firmly packed brown sugar
1/2 cup sugar
2 eggs
1 teaspoon vanilla
1 1/2 cup flour
1 teaspoon baking soda
1 teaspoon cinnamon
3 cups Quaker Oats (Old Fashioned – uncooked)
1 cup mini chocolate chips
