White chocolate and macadamia nuts seem to be made for each other. They are so tropical.. the crunch of the nuts and the soft flavor of the white chocolate… takes be back to any Island. These cookies will certainly remind you of your last tropical vacation. This White Chocolate Chip Macadamia Nut Cookie Recipe could not be any easier to make… which means you will make these a lot… promise! Our grocery store sells pre-chopped bags of macadamia nuts in 1/2 cup bags, so I adjusted the recipe to make a smaller batch, using only 1/2 cup of macadamia nuts. A full bag of white chocolate chips won’t be used in this recipe, but freeze them for the next one!
Preheat oven to 350 degrees
Combine flour, baking soda and salt in a small bowl. Mix well and set aside.
In a medium bowl combine butter and sugars until it forms a grainy paste.
Add egg and vanilla until fully combined.
Add the flour mixture, nuts and white chocolate chips and mix on low until just combined… do not over mix.
Using a small cookie scoop, drop onto an ungreased cookie sheet. Cook for 10 – 12 minutes or until edges begin to brown. Cool on rack. This recipe makes about 24 cookies.
