This is a new twist to a dessert recipe we have already posted, but this the true taste of summer and hit at our picnic over the weekend.
Make Lemon Pound Cake
Cut fresh peaches in half and place on grill – This will bring out the natural sugar in the peaches and give them the fresh taste of summer. The peaches should be grilled until they have nice grill marks and are heated through. Don’t overcook, they should still retain their firmness. Dice the peach halves into bite size pieces.
Add 1/4 cup sugar to 2 cups fresh blueberries. Heat in a small saucepan until the sugar is completely dissolved. Keep as many blueberries intact as possible.
To plate, slice a piece of the lemon pound cake. Add a nice scoop of blueberries and peaches. Serve with a generous scoop of vanilla ice cream.
